As Stephen Halpin, the bartender who created the Leap Year Margarita, says, “Dallas is the home of the frozen margarita, and I wanted to pay homage to it by hand freezing Gran Patrón Platinum for an upscale twist. It requires a special technique and is much more time consuming than a regular margarita, so it should only be replicated every four years.”
Halpin is no stranger to creative drinks – his smoked margarita is part of Patrón’s Search for 2016’s Margarita of the Year, a contest where consumers can choose their favorite of seven different margarita styles.
The Leap Year Margarita
Created by Stephen Halpin, Parliament (Dallas, TX)
2 oz Gran Patrón Platinum
.75 oz Patrón Citrónge Lime
.75 oz Key Lime Juice
.25 oz Yuzu Juice
2 Barspoons Key Lime Zest
Combine all ingredients in a stainless steel bowl and add liquid nitrogen. Stir consistently for 7 – 10 minutes until the liquid becomes a sorbet consistency. Add to a chilled coupe glass and top with a pearl of Patrón Citrónge Orange caviar*.
